Description
This hearty Southwest Ground Beef and Sweet Potato Skillet is the perfect one-pan dinner made with sweet potatoes, seasoned ground beef, bold spices, and melty cheese. A healthy, flavorful, and easy skillet meal ready in under 40 minutes.
Ingredients
1 tablespoon olive oil
1 pound ground beef
2 medium sweet potatoes, diced
1 red bell pepper, chopped
1 small onion, diced
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
Salt and pepper, to taste
1 cup shredded cheddar cheese
Optional toppings: chopped cilantro, avocado, sour cream, jalapeños
Instructions
1. Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes and sauté for 10 minutes until slightly softened and golden. Remove and set aside.
2. In the same skillet, cook ground beef until browned and no longer pink, about 6–8 minutes. Drain excess fat if needed.
3. Add chopped onion, garlic, and red bell pepper to the skillet. Cook for 3–4 minutes until softened.
4. Stir in chili powder, cumin, smoked paprika, salt, and pepper. Mix well to coat evenly.
5. Return sweet potatoes to the skillet. Reduce heat to low, cover, and simmer for 8–10 minutes or until everything is tender.
6. Sprinkle cheddar cheese on top and let melt. Add optional toppings as desired. Serve warm.
Notes
This dish is naturally gluten-free and easy to make dairy-free by omitting cheese or using vegan cheese.
Sweet potatoes can be swapped for white or red potatoes, but sweetness will vary.
Add a squeeze of lime or hot sauce for an extra pop of flavor.
