Ingredients
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 cup granulated sugar
1/2 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1/3 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1/2 cup hot coffee
20 soft caramels
3 tablespoons heavy cream
1/3 cup chopped salted peanuts
1/2 cup unsalted butter
1/2 cup creamy peanut butter
2 cups powdered sugar
2 to 3 tablespoons milk
3 Snickers bars, chopped
Instructions
1. Whisk together flour, cocoa powder, both sugars, baking soda, and salt.
2. In a separate bowl, mix buttermilk, oil, eggs, and vanilla extract. Combine with dry ingredients.
3. Stir in hot coffee until smooth. Batter will be thin.
4. Line cupcake pan and fill 2/3 full. Bake at 350°F for 18 to 22 minutes. Cool completely.
5. Melt caramels with heavy cream, then stir in chopped peanuts. Let cool slightly.
6. Core each cupcake and fill with caramel peanut mixture.
7. Beat butter and peanut butter, then gradually add powdered sugar and milk to form frosting.
8. Pipe frosting onto cupcakes and top with chopped Snickers. Drizzle extra caramel if desired.
Notes
Let cupcakes cool fully before coring.
Use high-quality cocoa for richer flavor.
Adjust milk in frosting for your preferred consistency.
