Ingredients
2 pounds Yukon Gold potatoes
2 large yellow onions
4 tablespoons unsalted butter
1 cup whole milk or heavy cream
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Slice the yellow onions thinly and cook them slowly in a skillet with 1 tablespoon of butter. Stir occasionally until deeply golden and caramelized, about 30–40 minutes. Set aside.
2. Peel and chop the potatoes into even chunks. Place them in a large pot of salted water and bring to a boil. Cook until fork-tender, around 15–20 minutes.
3. Drain the potatoes and return them to the warm pot. Add remaining butter and milk (or cream). Mash until smooth and creamy, or use a hand mixer for extra smoothness.
4. Fold in the caramelized onions. Stir gently until combined, and season with salt and pepper to taste.
5. Serve hot with a pat of butter or garnish with fresh chives if desired.
