Smashburger Quesadillas are a melty, cheesy fusion of juicy smashed beef and golden flour tortillas. A fast, skillet-friendly recipe perfect for weeknight meals or entertaining. Combines the flavors of a cheeseburger and quesadilla in one delicious bite.
Ingredients
1 lb ground beef
4 medium flour tortillas
1 cup shredded cheddar cheese
4 slices American cheese
½ cup sliced pickles
½ small onion, thinly sliced
1 tsp burger seasoning
2 tbsp butter
Instructions
1. Heat a large skillet over medium-high heat. Divide the ground beef into 4 equal balls.
2. Smash each ball flat in the skillet using a spatula and cook for 2-3 minutes per side until browned and crispy on the edges.
3. Lay out a flour tortilla and sprinkle shredded cheddar cheese over half.
4. Add one cooked beef patty on top, followed by a slice of American cheese, pickles, onion, and a pinch of burger seasoning.
5. Fold the tortilla in half to close and repeat with remaining ingredients.
6. Wipe out the skillet and add a bit of butter. Toast each quesadilla on both sides until golden brown and crispy, and the cheese has melted.
7. Slice into wedges and serve hot with your favorite dipping sauces.
Notes
Use 80/20 ground beef for juicier patties.
Avoid microwaving leftovers to keep the tortilla crispy—reheat in a skillet instead.
Add jalapeños, tomato slices, or a drizzle of burger sauce for a twist.
