Description

This Slow Cooker Garlic Parmesan Chicken Pasta is a rich, creamy comfort food classic made with tender shredded chicken, garlic, parmesan, and pasta. A perfect slow cooker chicken dinner for busy weeknights, family meals, or cozy Sunday suppers.


Ingredients

2 large chicken breasts

4 cloves minced garlic

8 oz cream cheese

1 cup chicken broth

1 cup grated parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

12 oz penne pasta (or rotini)

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Place chicken breasts in the slow cooker and season with salt, pepper, and Italian seasoning. Add minced garlic on top.

2. Cut cream cheese into cubes and place over the chicken. Pour in the chicken broth.

3. Cover and cook on low for 4–5 hours or high for 2.5 hours, until the chicken is tender and easily shredded.

4. Remove chicken, shred it, then return to the slow cooker. Stir until the sauce is smooth and combined.

5. Cook pasta separately according to package instructions. Drain and add to the slow cooker.

6. Add grated parmesan and mix well until pasta is fully coated.

7. Garnish with parsley and serve hot.

Notes

Add spinach at the end for a green twist.

Use chicken thighs if you prefer darker meat.

Reserve some pasta water to loosen the sauce if needed.
