This Slow-Braised Beef Roast with Cranberry Balsamic Glaze recipe features tender chuck roast slow-cooked to perfection in a rich, tangy-sweet cranberry balsamic sauce. Perfect for holiday dinners or comforting Sunday meals, this hearty roast is a flavorful twist on a classic beef recipe.
Ingredients
3–4 lbs chuck roast
1 ½ tsp salt
1 tsp black pepper
2 tbsp olive oil
1 large yellow onion, chopped
4 garlic cloves, minced
2 sprigs fresh rosemary
2 cups beef broth
½ cup balsamic vinegar
⅓ cup brown sugar
1 ½ cups fresh or frozen cranberries
1 tbsp Dijon mustard
1 tbsp cornstarch (optional)
Instructions
1. Pat chuck roast dry and season with salt and pepper.
2. Heat olive oil in a Dutch oven over medium-high. Sear roast on all sides until browned. Remove from pot.
3. In the same pot, sauté onion until soft, then add garlic and rosemary. Cook until fragrant.
4. Return roast to pot. Add beef broth and balsamic vinegar. Bring to simmer.
5. Cover and braise in preheated 325°F oven for 2.5 to 3 hours, until meat is fork-tender.
6. While roast cooks, make glaze: In a saucepan, combine cranberries, brown sugar, Dijon, and a splash of balsamic vinegar. Simmer until cranberries burst and sauce thickens. Add cornstarch slurry if needed.
7. Once roast is done, spoon some glaze over the beef and return to oven uncovered for 10 minutes.
8. Serve with remaining glaze on the side.
Notes
Use a well-marbled chuck roast for best flavor and tenderness.
Glaze can be made ahead and reheated before serving.
Leftovers are perfect for sandwiches or over mashed potatoes.
