Ingredients
1 can butter beans (15 oz)
3 cloves garlic, minced
1/3 cup sun-dried tomatoes, chopped
3/4 cup heavy cream
1/2 cup vegetable broth
1/4 cup grated parmesan cheese
1 tablespoon olive oil
1/4 teaspoon red pepper flakes (optional)
1/4 cup fresh basil, chopped
salt and pepper to taste
Instructions
1. Heat olive oil in a large skillet over medium heat. Add garlic and sun-dried tomatoes and sauté for 1 to 2 minutes until fragrant.
2. Pour in the heavy cream and vegetable broth, stirring to combine. Let it simmer for 5 minutes until slightly thickened.
3. Add butter beans and parmesan cheese. Stir gently and cook for another 5 to 7 minutes until the beans are warmed through and the cheese is melted.
4. Season with red pepper flakes, salt, and pepper. Stir in chopped fresh basil right before serving.
5. Serve hot, optionally with crusty bread on the side.
