Ingredients
6 to 8 large sea scallops
1 tablespoon Cajun seasoning
1 tablespoon olive oil
1 tablespoon butter
2 garlic cloves, minced
1 cup heavy cream
1/4 cup grated Parmesan cheese
1/4 cup chicken broth
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh parsley
Instructions
1. Pat dry the scallops thoroughly with paper towels to remove excess moisture.
2. Heat olive oil in a skillet over medium-high heat. Sear scallops for 2 minutes on each side until golden. Remove and set aside.
3. Reduce heat and add butter to the same skillet. Sauté garlic until fragrant, then add Cajun seasoning.
4. Pour in chicken broth and simmer for 2–3 minutes to reduce slightly.
5. Stir in heavy cream and Parmesan. Simmer gently until sauce thickens.
6. Return scallops to pan to warm through. Season with salt and pepper.
7. Garnish with parsley and serve hot over pasta, rice, or polenta.
Notes
Pat scallops very dry for the best sear.
Do not overcrowd the skillet—sear in batches if needed.
Adjust Cajun seasoning to taste if sensitive to spice.
