These Scalloped Potatoes with Three Cheeses are rich, creamy, and loaded with cheddar, mozzarella, and parmesan. A comforting side dish perfect for holidays or weeknight dinners, this cheesy potato casserole is easy to make and utterly satisfying.
Ingredients
3 pounds potatoes
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
4 tablespoons unsalted butter
1/4 cup all-purpose flour
3 cups whole milk
1 teaspoon garlic powder
1 1/2 teaspoons salt
1/2 teaspoon black pepper
Instructions
1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
2. Peel and thinly slice the potatoes into 1/8-inch rounds using a mandoline or sharp knife.
3. In a saucepan over medium heat, melt the butter. Add flour and stir constantly to make a roux; cook for 1–2 minutes.
4. Gradually whisk in the milk, stirring until smooth and thickened. Add garlic powder, salt, and pepper.
5. Stir in the cheddar and mozzarella cheeses, reserving 1/2 cup of each for topping.
6. Layer one-third of the potatoes in the baking dish. Pour one-third of the cheese sauce over. Repeat for two more layers.
7. Top with remaining cheddar, mozzarella, and all the parmesan.
8. Cover with foil and bake for 45 minutes.
9. Remove foil and bake another 20–25 minutes, until the top is golden and bubbly.
10. Let rest 10 minutes before serving to allow the dish to set.
Notes
Use Russet or Yukon Gold potatoes for the best texture and flavor.
Letting the dish rest before serving helps it firm up for clean slices.
For a flavor twist, try swapping one cheese for Gruyère or Fontina.
