Ingredients
2 boxes Jiffy corn muffin mix
2 large eggs
2/3 cup milk
1/2 cup unsalted butter melted
1 1/2 cups finely chopped broccoli florets

1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Preheat oven to 375°F and grease an 8×8 inch baking dish or cast iron skillet.
2. In a large bowl whisk together eggs, milk, and melted butter until smooth.
3. Stir in Jiffy corn muffin mix, salt, and black pepper until just combined.
4. Fold in chopped broccoli and shredded cheddar cheese evenly.
5. Pour batter into prepared dish and smooth the top.
