This Savory Italian Meatloaf with Cheese is a comforting family dinner classic made with ground beef, Italian herbs, and gooey mozzarella center. A cheesy meatloaf recipe that’s juicy, hearty, and perfect for easy weeknight meals or Sunday dinners.
Ingredients
1 ½ pounds ground beef
¾ cup breadcrumbs
½ cup milk
2 eggs
½ cup grated Parmesan cheese
1 tablespoon Italian seasoning
3 cloves garlic, minced
1 small onion, diced and sautéed
1 cup shredded mozzarella cheese
¾ cup marinara sauce
Instructions
1. Preheat oven to 375°F.
2. In a large mixing bowl, combine ground beef, breadcrumbs, milk, eggs, Parmesan, Italian seasoning, garlic, and sautéed onion. Mix gently to combine.
3. On parchment paper, shape half the meat mixture into a loaf base and create a well in the center.
4. Fill the center with mozzarella, then top with remaining meat and seal the edges.
5. Transfer the loaf to a greased baking dish.
6. Pour marinara sauce over the top.
7. Cover loosely with foil and bake for 40 minutes.
8. Remove foil and bake an additional 15 minutes until internal temp is 160°F.
9. Let rest for 10 minutes before slicing and serving.
Notes
This meatloaf can be made ahead and frozen raw.
For extra moisture, don’t overmix the meat mixture.
Using freshly shredded mozzarella melts better than pre-shredded.
