Ingredients

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon salt

1/2 teaspoon black pepper

1 pound steak (sirloin, ribeye, or flank)

3 cups butternut squash, peeled and cubed

4 cups cooked rice or greens

1 tablespoon lemon juice (optional)


Instructions

1. In a small bowl, mix olive oil, minced garlic, chopped herbs, salt, and pepper to create the marinade.

2. Coat the steak in the marinade and refrigerate for at least 30 minutes or overnight.

3. Preheat oven to 400°F (200°C).

4. Toss butternut squash with olive oil, salt, and pepper.

5. Roast the squash on a baking sheet for 25 to 30 minutes until golden and tender.

6. Heat a skillet over medium-high heat.

7. Sear the marinated steak for 3 to 5 minutes per side, depending on thickness and desired doneness.

8. Let steak rest for 5 minutes, then slice against the grain.

9. In a bowl, layer rice or greens, roasted squash, and sliced steak.

10. Drizzle with lemon juice or remaining marinade and serve.
