Ingredients
450g linguine
400g beef sirloin or ribeye, thinly sliced
4 cloves garlic, minced
4 tablespoons butter
2 tablespoons olive oil
Salt, to taste
Black pepper, to taste
50g parmesan cheese, grated
2 tablespoons fresh parsley, chopped (optional)
120ml pasta water (reserved from boiling)
Instructions
1. Bring a large pot of salted water to a boil and cook linguine until al dente. Reserve 120ml of pasta water, then drain.
2. In a skillet, heat olive oil over medium-high heat. Add the beef, season with salt and pepper, and sear until browned and just cooked through. Remove and set aside.
3. In the same skillet, reduce heat to medium and add butter. Stir in garlic and sauté for 1–2 minutes until fragrant.
4. Return beef to the skillet. Add cooked linguine and a splash of pasta water. Toss to coat everything evenly in the sauce.
5. Finish with parmesan and parsley. Serve hot.
Notes
Use freshly grated parmesan for the best flavor.
Add red pepper flakes for a spicy twist.
Thinly slice beef against the grain to keep it tender.
