Description

Ingredients

1 tablespoon olive oil

1 pound Italian sausage

1 medium yellow onion, chopped

3 cloves garlic, minced

6 cups chicken broth

9 ounces cheese tortellini

4 cups chopped kale, stems removed

1 cup heavy cream

Salt and pepper to taste


Instructions

1. Heat olive oil in a large pot over medium-high heat. Add Italian sausage and cook until browned, breaking it up with a spoon. Remove and set aside.

2. In the same pot, add a little more olive oil if needed. Add chopped onion and sauté until soft. Add minced garlic and cook for 30 seconds.

3. Pour in chicken broth, scraping up browned bits from the pot. Bring to a simmer.

4. Add kale and tortellini. Simmer for 5 to 7 minutes until tortellini is tender and kale is wilted.

5. Return sausage to the pot. Stir in heavy cream. Simmer for a few more minutes. Season with salt and pepper to taste.

6. Serve hot and enjoy.

Notes

This soup thickens slightly as it sits, so feel free to add extra broth when reheating.

Use spicy Italian sausage for an extra kick of heat.

Fresh, refrigerated, or frozen tortellini all work well—just adjust cooking time slightly.
