Ingredients
40 saltine crackers
1 cup unsalted butter
1 cup brown sugar
2 cups semi-sweet chocolate chips
1 teaspoon vanilla extract
½ cup chopped pecans (optional)
2 tablespoons crushed candy canes (optional)
Pinch of sea salt flakes (optional)
Instructions
1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or aluminum foil.
2. Arrange the saltine crackers in a single layer, covering the entire pan.
3. In a saucepan, melt butter and brown sugar over medium heat. Stir constantly until the mixture begins to boil.
4. Allow the mixture to bubble for 3 minutes without stirring. Remove from heat and stir in the vanilla extract.
5. Carefully pour the toffee mixture over the crackers and spread it evenly.
6. Bake for 5 minutes until the caramel is bubbling.
7. Remove from the oven and sprinkle chocolate chips over the hot caramel. Let sit 1 minute.
8. Spread the melted chocolate evenly using a spatula.
9. Add desired toppings such as nuts, candy cane bits, or sea salt.
10. Refrigerate for 1 hour or until fully set.
11. Break into pieces and serve or store in an airtight container.
Notes
This candy keeps well in the fridge for up to 2 weeks.
For a twist, try using club crackers instead of saltines.
Always spread the toffee quickly after pouring to avoid it setting unevenly.
