Ingredients
1 ½ cups salmon (canned or cooked, flaked)
½ cup breadcrumbs
1 large egg
2 green onions, finely chopped
2 cloves garlic, minced
1 teaspoon Dijon mustard
1 teaspoon lemon zest
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons olive oil (for frying)
¼ cup mayonnaise
2 tablespoons Greek yogurt
1 tablespoon lemon juice
1 clove garlic, minced
1 tablespoon chopped parsley
Instructions
1. In a bowl, combine salmon, breadcrumbs, egg, green onions, garlic, Dijon mustard, lemon zest, salt, and pepper.
2. Mix until fully combined and shape into patties.
3. Place the patties on a plate and refrigerate for 15–20 minutes to help them set.
4. Heat olive oil in a skillet over medium heat and cook the patties for 3–4 minutes on each side, until golden brown.
5. Meanwhile, mix the sauce ingredients: mayonnaise, Greek yogurt, lemon juice, garlic, and parsley in a small bowl until smooth.
6. Serve the warm salmon patties with the creamy lemon-garlic sauce on the side or drizzled on top.

These patties are freezer-friendly, both cooked and uncooked.
You can use fresh salmon leftovers or canned salmon interchangeably.
