Description

Ingredients

1 ¾ cups all-purpose flour

1 teaspoon baking soda

¼ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground cloves

½ cup brown sugar

½ cup molasses

1 large egg

½ cup vegetable oil

¾ cup buttermilk

1 teaspoon vanilla extract


Instructions

1. Preheat oven to 350°F (175°C) and prepare a muffin tin with liners or grease.

2. In a large bowl, whisk together flour, baking soda, salt, cinnamon, and cloves.

3. In another bowl, whisk brown sugar, molasses, egg, oil, buttermilk, and vanilla until smooth.

4. Combine wet and dry ingredients just until mixed; do not overmix.

5. Spoon batter into muffin cups, filling each about ¾ full.

6. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.

7. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes
