Ingredients
3 large Honeycrisp apples
1 pie crust (store-bought or homemade)
2 tablespoons brown sugar
2 tablespoons granulated sugar

1/4 teaspoon ground nutmeg
1 tablespoon cornstarch
1 egg, beaten (for egg wash)
1 tablespoon coarse sugar (optional)
Instructions

2. Toss the apple slices with brown sugar, granulated sugar, cinnamon, nutmeg, and cornstarch. Let sit for 10 minutes.
3. Roll out the pie crust into a 12-inch circle on a floured surface and transfer to a parchment-lined baking sheet.
4. Arrange the apples in the center, leaving a 2-inch border.
5. Fold the crust over the apples, pleating the edges as needed.
6. Brush the crust with egg wash and sprinkle with coarse sugar.
7. Bake at 375°F (190°C) for 40 to 45 minutes until golden and bubbly.
8. Cool slightly before slicing and serving.
Notes
Use cold butter if making your own crust for extra flakiness.
Let the apple mixture sit to release juices and activate the cornstarch.
Reheat leftovers in the oven to maintain the crisp crust.
