Description

These Rocky Road Brownies are rich, fudgy, and loaded with gooey mini marshmallows, crunchy nuts, and melty chocolate chips. The ultimate chewy brownie dessert bar with a fun, nostalgic twist, perfect for parties or casual treats.


Ingredients

1 cup unsalted butter

1 cup granulated sugar

1 cup brown sugar

4 large eggs

2 teaspoons vanilla extract

1 cup all-purpose flour

1 cup cocoa powder

1 teaspoon salt

1 cup chocolate chips

2 cups mini marshmallows

1 cup chopped walnuts or pecans


Instructions

1. Preheat oven to 350°F (175°C) and grease or line a 9×13-inch baking pan.

2. Melt butter in a saucepan over low heat and stir in granulated and brown sugar until dissolved.

3. Remove from heat and let cool slightly. Stir in eggs and vanilla until smooth.

4. Whisk in flour, cocoa powder, and salt until fully incorporated.

5. Fold in chocolate chips and pour the batter into the prepared baking pan.

6. Bake for 25–28 minutes or until a toothpick comes out with a few moist crumbs.

7. Quickly top with mini marshmallows and chopped nuts.

8. Return to the oven for 5 minutes until marshmallows puff and lightly brown.

9. Let brownies cool completely in the pan before slicing and serving.

Notes

Let brownies cool fully before cutting for clean slices.

You can use pecans or walnuts depending on your taste.

Swap chocolate chips for chunks for an extra melty effect.
