Description

Roasted carrots with ricotta is a colorful and elegant vegetable side dish recipe that’s healthy, easy to prepare, and perfect for any occasion. Sweet roasted carrots paired with creamy ricotta make a flavorful vegetarian option that’s both comforting and refined.


Ingredients

500 g fresh carrots

200 g ricotta cheese

2 tbsp olive oil

1 tbsp honey or maple syrup

1 tsp flaky sea salt

1/2 tsp freshly cracked black pepper

1 tbsp fresh herbs (thyme or parsley)


Instructions

1. Preheat oven to 400°F (200°C). Wash and peel the carrots, then cut them lengthwise if thick for even roasting.

2. Place carrots on a baking sheet, drizzle with olive oil, season with salt and pepper, and toss to coat evenly.

3. Spread carrots in a single layer and roast for 20–25 minutes, turning once, until golden and tender.

4. Spread ricotta on a serving platter and arrange roasted carrots on top while warm.

5. Drizzle with honey or maple syrup and sprinkle with fresh herbs before serving.

Notes

Use rainbow carrots for a colorful presentation.

If you prefer a savory version, omit the honey and sprinkle with chili flakes.

For a richer ricotta, whip it with a touch of lemon zest before plating.
