Description

This roasted asparagus recipe is a quick and healthy side dish made with fresh asparagus, olive oil, and simple seasonings. It’s oven-roasted to perfection with crispy tips and tender stalks. Perfect for weeknight dinners or elegant holiday meals, and packed with nutrients like fiber, vitamin C, and folate.

Ingredients

1 lb asparagus

2 tbsp olive oil

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp garlic powder (optional)

2 tbsp Parmesan cheese, grated (optional)

Instructions

1. Rinse asparagus under cold water and pat dry. Trim 1 to 2 inches from the woody ends.

2. Preheat oven to 425°F (220°C).

3. Place asparagus on a baking sheet. Drizzle with olive oil and toss to coat evenly.

4. Sprinkle with salt, pepper, and garlic powder if using.

5. Arrange in a single layer and roast for 12 to 15 minutes, until tips are crispy and stalks are tender.

6. Remove from oven and optionally top with grated Parmesan. Serve warm.

Notes

Roasting time varies based on asparagus thickness.

Peeling thick spears improves texture.

Add lemon zest or balsamic drizzle for extra flavor.
