Description

Ingredients

1 1/2 cups chocolate sandwich cookies

6 tablespoons butter

24 ounces cream cheese

1 cup granulated sugar

1/2 cup sour cream

1 teaspoon vanilla extract

3 large eggs

3/4 cup creamy peanut butter

1 1/2 cups chopped mini Reese’s Peanut Butter Cups

1/2 cup heavy cream

3/4 cup semi-sweet chocolate chips

Extra chopped Reese’s for topping


Instructions

1. Preheat oven to 325°F. Crush chocolate sandwich cookies into crumbs and mix with melted butter. Press into the bottom of a springform pan and bake for 10 minutes. Let cool.

2. Beat cream cheese and sugar until smooth. Mix in sour cream, vanilla, and peanut butter. Add eggs one at a time, mixing just until blended. Fold in chopped Reese’s.

3. Pour filling over crust. Bake in a water bath for about 60 minutes or until center is set. Let cool with oven door ajar, then chill at least 4 hours or overnight.

4. Heat heavy cream and pour over chocolate chips. Stir into a smooth ganache. Spread over cheesecake and top with more chopped Reese’s before serving.

Notes

Make sure the cream cheese is at room temperature for a smoother filling.

Freeze the Reese’s slightly before chopping to keep their shape.

Use a hot knife for clean slices through the ganache topping.
