Description
This Quick Weight Loss Cabbage Soup is a low-calorie, high-fiber, one-pot recipe perfect for detox, weight loss, or clean eating. Packed with cabbage, carrots, celery, and more, it’s vegan, gluten-free, and ideal for meal prep.
Ingredients
2 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 carrots, sliced
2 celery stalks, chopped
3 cups green cabbage, thinly sliced
1 bell pepper, diced
1 cup green beans, trimmed and cut
1 zucchini, chopped
1 can diced tomatoes (14.5 oz)
6 cups vegetable broth
1 teaspoon dried Italian herbs
Salt and pepper to taste
Instructions
1. In a large pot, heat olive oil over medium heat. Add chopped onions, garlic, celery, and carrots. Cook for about 5 minutes until softened.
2. Stir in diced tomatoes and cook for another 2 minutes to enhance flavor.
3. Pour in vegetable broth and bring to a simmer.
4. Add in cabbage, bell peppers, green beans, and zucchini. Season with Italian herbs, salt, and pepper.
5. Bring the soup to a boil, then reduce heat and simmer uncovered for 25–30 minutes.
6. Taste and adjust seasoning. Serve hot with a lemon wedge or chili flakes if desired.
Notes
Use green cabbage for a classic flavor, but Napa or red cabbage also work.
Soup gets more flavorful the next day — great for leftovers.
Add chili flakes or a splash of apple cider vinegar for a kick.
