Ingredients

1 pound flank steak thinly sliced against the grain

3 tablespoons soy sauce divided

1 tablespoon cornstarch

2 tablespoons olive oil

3 cloves garlic minced

1 tablespoon fresh ginger grated

1 red bell pepper sliced

1 yellow bell pepper sliced

2 cups broccoli florets

1 cup carrots thinly sliced

2 tablespoons brown sugar

1/4 cup water

1 tablespoon sesame oil

2 green onions sliced


Instructions

1. Slice the flank steak thinly against the grain and toss with 1 tablespoon soy sauce and cornstarch. Let sit for 10 minutes.

2. In a small bowl mix remaining soy sauce, brown sugar, water, and sesame oil. Set aside.

3. Heat 1 tablespoon olive oil in a large skillet over medium high heat. Add beef in a single layer and cook 2 to 3 minutes until browned. Remove from skillet.

4. Add remaining olive oil to the pan. Stir in garlic and ginger and cook 30 seconds until fragrant.

5. Add broccoli, bell peppers, and carrots. Stir fry 4 to 5 minutes until tender crisp.

6. Return beef to the skillet and pour sauce over everything.

7. Cook 2 to 3 minutes until sauce thickens and coats the beef and vegetables.

8. Garnish with green onions and serve hot.

Notes

Slice the beef very thin and against the grain to ensure tenderness.

Have all ingredients prepped before cooking since stir fry moves quickly.

Cook over medium high heat to achieve a proper sear without overcooking the beef.
