Ingredients

2 pounds Yukon Gold potatoes

4 tablespoons unsalted butter

1/2 cup heavy cream

1 cup shredded smoked gouda cheese

1 teaspoon salt

1/2 teaspoon freshly cracked black pepper


Instructions

1. Peel and chop Yukon Gold potatoes into even chunks. Place in a large pot, cover with cold water, and add a pinch of salt.

2. Bring to a boil and cook for 15–20 minutes until fork-tender.

3. Drain the potatoes and return to the pot. Let sit for 1 minute to dry.

4. Add butter and mash until mostly smooth.

5. Gradually pour in the warm heavy cream while mashing to desired consistency.

6. Stir in the shredded smoked gouda cheese until melted and incorporated.
