Ingredients
1 pound ground beef
1 cup long grain white rice
1 bell pepper, diced
2 celery stalks, chopped
1 small onion, chopped
2 cloves garlic, minced
1 tablespoon Cajun seasoning
2 cups beef broth
1 bay leaf
1 tablespoon oil (for sautéing)
Instructions
1. Heat oil in a large skillet over medium heat. Add diced onion, bell pepper, and celery. Cook until softened.
2. Stir in the minced garlic and cook for 1 more minute.
3. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
4. Sprinkle in Cajun seasoning and stir until well combined.
5. Add the uncooked rice, beef broth, and bay leaf. Stir and bring to a gentle boil.
6. Reduce heat to low, cover, and simmer for 18 to 20 minutes, or until the rice is cooked and broth is absorbed.
7. Remove bay leaf, fluff the rice with a fork, and serve hot.
Notes
Use lean ground beef to prevent the dish from becoming greasy.
Adjust the spice level by choosing mild or hot Cajun seasoning.
