Description

Quick and Easy Vegan Donuts are soft, fluffy, baked donuts made without eggs or dairy, perfect for an easy vegan breakfast, simple brunch treat, or sweet homemade dessert. These homemade vegan donuts come together with pantry staples, bake in minutes, and taste delicious with cinnamon sugar or a light glaze.


Ingredients

2 cups all-purpose flour

1/2 cup granulated sugar

2 teaspoons baking powder

1/4 teaspoon salt

1/2 teaspoon ground nutmeg

3/4 cup unsweetened almond milk

2 teaspoons apple cider vinegar

1/4 cup vegetable oil

1 teaspoon vanilla extract

2 tablespoons melted vegan butter

1/3 cup cinnamon sugar


Instructions

1. Preheat the oven to 350°F and lightly grease a donut pan.

2. In a small bowl, stir together the almond milk and apple cider vinegar. Let it sit for 5 minutes to create a vegan buttermilk.

3. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and nutmeg.

4. Add the vegan buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Stir just until the batter is smooth and combined.

5. Transfer the batter to a piping bag or zip-top bag with the corner cut off, then pipe it into the donut pan, filling each cavity about three quarters full.

6. Bake for 10 to 12 minutes, or until the donuts are lightly golden and spring back when touched.

7. Let the donuts cool in the pan for 5 minutes, then move them to a wire rack.

8. Brush the warm donuts with melted vegan butter and coat them in cinnamon sugar before serving.

Notes

For the softest texture, do not overmix the batter once the wet ingredients are added.

If you do not have almond milk, oat milk or soy milk works well too.

These donuts are best the day they are made, but a quick warm-up brings back their soft texture nicely.
