Ingredients
1 pound ground beef
2 tablespoons taco seasoning
2 cups cooked white or brown rice
1 cup black beans
2 cups shredded lettuce
1 cup diced tomatoes
1 cup shredded cheddar cheese
1/2 cup sour cream or Greek yogurt
1 sliced avocado or 1/2 cup guacamole
1 cup tortilla strips or crushed chips
Fresh cilantro and lime wedges, for garnish
Instructions
1. In a skillet over medium-high heat, brown the ground beef until cooked through, about 6 to 8 minutes. Drain excess fat.
2. Stir in taco seasoning and 1/4 cup of water, simmer until thickened, about 2 minutes.
3. Heat the black beans in a small saucepan or microwave until warm.
4. Prepare your toppings: dice tomatoes, shred lettuce, slice avocado, and chop cilantro.
5. Assemble each bowl starting with a layer of rice.
6. Add a scoop of seasoned beef, followed by black beans and your desired toppings.
7. Finish with sour cream, cilantro, and a wedge of lime for brightness.
