Ingredients
1 ¾ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
1 ½ teaspoons espresso powder
½ cup unsalted butter, softened
¾ cup brown sugar
¼ cup granulated sugar
⅓ cup pumpkin puree
1 egg yolk
1 teaspoon vanilla extract
Glaze:
¾ cup powdered sugar
½ teaspoon espresso powder
1 ½ tablespoons milk
Instructions
1. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, cloves, and espresso powder.
2. In a large bowl, beat butter, brown sugar, and granulated sugar until fluffy.
3. Add pumpkin puree, egg yolk, and vanilla. Mix until smooth.
4. Slowly mix in dry ingredients until just combined.
5. Chill dough for 30 minutes. Preheat oven to 350°F (175°C).
6. Scoop dough onto parchment-lined baking sheet.
7. Bake for 10–12 minutes, until edges are set and centers are puffed.
8. Let cool completely.
9. For glaze: whisk powdered sugar, espresso powder, and milk until smooth.
10. Drizzle over cookies and let set.
Notes
Let the cookies cool completely before glazing to prevent melting.
You can add mini chocolate chips or white chocolate chunks to the dough.
Use canned pumpkin puree, not pumpkin pie filling.
