Description

This moist and flavorful Pumpkin Bread recipe is made with canned pumpkin and warm spices like cinnamon and nutmeg. Perfect for fall or anytime you crave cozy baked goods, it’s easy to make and great for breakfast, snacks, or dessert.


Ingredients

1 3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

3/4 cup granulated sugar

1/2 cup brown sugar

2 large eggs

1 cup pumpkin puree

1/2 cup vegetable oil

1 teaspoon vanilla extract


Instructions

1. Preheat oven to 350°F and grease a 9×5-inch loaf pan.

2. In a bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.

3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, oil, and vanilla extract.

4. Slowly stir dry ingredients into wet ingredients until combined. Do not overmix.

5. Pour batter into prepared pan and smooth the top.

6. Bake for 55–65 minutes or until a toothpick inserted comes out clean.

7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Make sure to use 100% pumpkin puree, not pumpkin pie filling.

Don’t overmix the batter to keep the bread soft and tender.

This bread freezes well—wrap slices individually for quick snacks.
