Ingredients
2 cups mashed potatoes
1 cup mozzarella cheese (or preferred blend)
2 tablespoons cornstarch or all-purpose flour
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
2 eggs, beaten
1 1/2 cups breadcrumbs (panko or regular)
Oil for frying
Instructions
1. Boil and mash the potatoes until smooth, then let them cool completely.
2. Mix the mashed potatoes with cornstarch (or flour), garlic powder, salt, and pepper to form a dough.
3. Take a portion of potato mix, flatten it, add a stick of cheese, and shape into a stick.
4. Dip each stick into beaten eggs, then coat with breadcrumbs. Repeat for extra crunch.
5. Freeze the sticks for 20–30 minutes to help them firm up.
6. Heat oil and deep fry the sticks until golden and crispy. Drain and serve hot.
Notes
Make sure potatoes are fully cooled before mixing.
Use block cheese for cleaner melts instead of shredded.
