Description

This festive Pomegranate Christmas Salad is a vibrant holiday side dish packed with pomegranate seeds, creamy goat cheese, candied nuts, and fresh greens. Perfect for Christmas dinner, it’s easy to make and full of seasonal flavor. A must-try for your holiday menu.


Ingredients

5 cups mixed greens

1 cup pomegranate seeds

4 oz goat cheese, crumbled

1/3 cup candied pecans or walnuts

1/4 small red onion, thinly sliced

1/4 cup balsamic vinaigrette


Instructions

1. Wash and dry the greens thoroughly. If needed, chop into bite-sized pieces.

2. Thinly slice the red onion and crumble the goat cheese.

3. In a large bowl, add the greens. Top with pomegranate seeds, goat cheese, red onion, and candied nuts.

4. Drizzle balsamic vinaigrette just before serving.

5. Gently toss until everything is evenly coated.

6. Transfer to a serving platter and garnish with extra seeds and nuts.

Notes

Store undressed leftovers in the fridge for up to 2 days.

Use kale or romaine if assembling in advance.
