Description

This Pineapple Chicken Kabobs recipe is a grilled dinner favorite featuring juicy chicken, sweet pineapple, and colorful veggies. Perfect for BBQs or healthy weeknight meals. Great tropical flavor and easy prep!


Ingredients

1.5 lbs chicken breast

2 cups fresh pineapple chunks

1 red bell pepper

1 green bell pepper

1 red onion

1/4 cup soy sauce

2 tablespoons honey

2 tablespoons olive oil

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. In a bowl, mix soy sauce, honey, olive oil, garlic, salt, and pepper.

2. Cut chicken into bite-sized pieces and marinate in the mixture for at least 1 hour.

3. Chop pineapple, bell peppers, and onion into similar-sized chunks.

4. If using wooden skewers, soak them in water for 30 minutes.

5. Thread chicken, pineapple, peppers, and onion onto skewers.

6. Preheat grill to medium-high heat.

7. Grill kabobs for 10–15 minutes, turning occasionally, until chicken is cooked through.

8. Let rest for a couple of minutes before serving.

Notes

Marinate overnight for deeper flavor.

Soak wooden skewers to prevent burning.
