Description

These pecan pie oatmeal cookies blend chewy oats, buttery pecans, and warm brown sugar flavors into the ultimate cozy dessert. A perfect fall treat or year-round indulgence for cookie lovers!

Ingredients

1 cup unsalted butter

1 cup brown sugar

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

3 cups old-fashioned rolled oats

1 1/4 cups toasted pecans

2 tablespoons maple syrup

Instructions

1. Beat the butter, brown sugar, and granulated sugar together until light and fluffy.

2. Add the eggs one at a time, then mix in vanilla extract.

3. In another bowl, whisk together the flour, baking soda, and salt.

4. Gradually add the dry ingredients to the wet mixture and mix until combined.

5. Fold in the oats and toasted pecans, then drizzle in the maple syrup.

6. Chill the dough for at least 30 minutes.

7. Preheat oven to 350°F (175°C) and line baking sheets.

8. Scoop dough onto sheets and bake for 10 to 12 minutes, until edges are golden.

9. Cool on the pan briefly, then transfer to a wire rack to cool completely.

Notes

These cookies freeze beautifully—both baked and unbaked.

For crispier edges, bake slightly longer.

Try adding a drizzle of chocolate or caramel for extra indulgence.
