Ingredients
1 cup brown sugar
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 large eggs
1/2 cup unsalted butter, melted
1/2 cup milk
1 teaspoon vanilla extract
1 cup chopped pecans
Instructions
1. Preheat your oven to 350°F and line a muffin tin with paper liners or lightly grease it.
2. In a large bowl, whisk together the brown sugar, flour, baking powder, and salt until well combined.
3. In another bowl, whisk the eggs, melted butter, milk, and vanilla extract until smooth.
4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the chopped pecans.
5. Spoon the batter into the muffin cups, filling them about 2/3 full.
6. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
