Ingredients
4 firm pears, peeled, cored and halved
1/3 cup pure maple syrup
1/2 cup unsalted butter
1/3 cup brown sugar
1/2 cup chopped pecans
1 sheet puff pastry, thawed
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Instructions
1. Preheat oven to 375°F.
2. Peel, core, and halve the pears. Trim bottoms slightly so they sit flat.
3. In a 10 inch oven safe skillet, melt butter over medium heat.
4. Stir in brown sugar and maple syrup. Cook until bubbling and slightly thickened, about 3 to 5 minutes.
5. Add vanilla, cinnamon, and salt. Stir to combine.
6. Arrange pear halves cut side up in the caramel.
7. Sprinkle chopped pecans between and around the pears. Simmer 5 minutes.
8. Roll puff pastry slightly larger than skillet. Place over pears and tuck edges inside the pan.
9. Cut small slits in the pastry for steam.
10. Bake 30 to 35 minutes until pastry is golden brown.
11. Cool 10 minutes, then carefully invert onto a serving plate.
12. Serve warm.
Notes
Use firm pears like Bosc or Anjou so they hold their shape.
Allow the tart to rest before flipping to prevent caramel spills.
Reheat leftovers in the oven for best texture.
