Ingredients
1 box brownie mix
2 large eggs
1/2 cup oil
3/4 cup creamy peanut butter
1/2 cup powdered sugar
1 teaspoon vanilla extract
Instructions
1. In a small bowl, combine creamy peanut butter, powdered sugar, and vanilla extract. Mix until smooth, then roll into 1-inch balls and freeze while prepping the batter.
2. In a large mixing bowl, stir together brownie mix, eggs, and oil until fully combined and smooth.
3. Preheat oven to 350°F. Line a muffin tin with paper liners or spray with nonstick spray.
4. Spoon a tablespoon of brownie batter into each muffin cup. Place a peanut butter ball in the center, then top with more batter to cover.
5. Bake for 18–20 minutes or until tops are set and slightly crackly.
6. Let cool in the pan for 10 minutes, then transfer to a wire rack.
7. Serve warm for a gooey center or let cool completely to store.
Notes
These brownie cups freeze well—just thaw at room temperature before serving.
For an extra indulgent twist, drizzle with melted chocolate or top with a mini peanut butter cup.
Avoid using natural peanut butter with oil separation for the best texture.
