Ingredients
1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
24 oz cream cheese, softened
3/4 cup granulated sugar
3 large eggs
1 1/2 tsp vanilla extract
1/2 tsp ground cinnamon
3 cups sliced peaches (fresh, canned, or frozen and drained)
3/4 cup all-purpose flour
1/2 cup brown sugar
1 tsp baking powder
1/4 cup unsalted butter, melted (for topping)
Instructions
1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
2. Mix graham cracker crumbs with melted butter. Press into the bottom of the pan to form the crust. Bake for 10 minutes and let cool.
3. Beat cream cheese until smooth, then add sugar and vanilla. Add eggs one at a time, mixing slowly. Pour over crust.
4. Layer sliced peaches evenly over the cheesecake layer.
5. In a separate bowl, combine flour, brown sugar, cinnamon, baking powder, and melted butter to create crumble. Sprinkle over peaches.
6. Bake for 55–65 minutes, until the center is set and the top is golden.
7. Cool at room temperature, then refrigerate at least 4 hours or overnight before serving.
Notes
This recipe can be made a day in advance for easier slicing.
Use fresh peaches when in season for best flavor.
If using canned peaches, make sure they are drained and patted dry.
