2 tablespoons olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (adjust for heat preference)
1 cup canned diced tomatoes
1 teaspoon sugar
Salt and pepper to taste
For Garnish:
Fresh parsley, finely chopped
Instructions
- Prepare the Potatoes:
- Peel and dice the potatoes into bite-sized cubes. Rinse them in cold water to remove excess starch, then pat dry with a clean towel.
- Heat 3 tablespoons of olive oil in a large pan over medium-high heat. Add the diced potatoes, spreading them evenly in the pan. Cook for 15-20 minutes, stirring occasionally, until they become golden and crispy.
- Season the potatoes with smoked paprika, garlic powder, chili powder (if using), salt, and pepper. Toss well and set aside.
- Make the Bravas Sauce:
- In a separate pan, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and cook for 4-5 minutes until softened.
- Stir in the minced garlic and cook for another minute. Add smoked paprika and cayenne pepper, stirring constantly for 30 seconds.
