Description

These Parmesan Herb Sweet Potato Medallions are crispy, golden roasted sweet potato rounds seasoned with garlic, Italian herbs, and finished with Parmesan. Perfect as a healthy side dish or appetizer, this easy oven-baked recipe is both flavorful and simple to make.


Ingredients

2 medium sweet potatoes

2 tablespoons olive oil

1/3 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

2 tablespoons fresh parsley, chopped

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Wash sweet potatoes and slice into 1/2-inch thick medallions. Peel if desired.

3. In a large bowl, toss medallions with olive oil, garlic powder, Italian seasoning, salt, and pepper until evenly coated.

4. Arrange slices in a single layer on the baking sheet.

5. Roast for 25-30 minutes, flipping halfway through, until edges are golden and centers are tender.

6. Sprinkle Parmesan over each medallion in the last 5 minutes of baking.

7. Remove from oven, garnish with chopped parsley, and serve warm.
