Ingredients
1 lb carrots
2 tbsp olive oil
3 cloves garlic, minced
1/3 cup grated parmesan cheese
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp Italian seasoning (optional)
1 tbsp fresh parsley, chopped (for garnish)
Instructions
1. Wash and peel carrots. Slice into sticks or lengthwise.
2. In a bowl, toss carrots with olive oil, minced garlic, salt, pepper, and Italian seasoning.
3. Sprinkle grated parmesan and toss again to coat evenly.
4. Preheat oven to 400°F (200°C). Arrange carrots in a single layer on a baking sheet.
5. Roast for 25–30 minutes, flipping halfway, until golden and tender.
6. Garnish with fresh parsley and serve hot.
Notes
Use baby carrots for convenience and consistent roasting.
Grate parmesan fresh for best melt and texture.
