Description

Oven-Roasted Cajun Chicken and Garlic Potatoes with Parmesan is a one-pan chicken dinner that combines bold Cajun spices, crispy garlic potatoes, and creamy parmesan. Perfect for busy weeknights or a cozy Sunday meal.


Ingredients

4 chicken thighs or drumsticks

1.5 pounds baby potatoes

2 tablespoons olive oil

1.5 tablespoons Cajun seasoning

4 garlic cloves, minced

1/3 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment or foil.

2. Place chicken in a bowl. Add 1 tablespoon olive oil, Cajun seasoning, salt, and pepper. Rub to coat.

3. Halve or quarter the baby potatoes. In a separate bowl, toss with 1 tablespoon olive oil, minced garlic, salt, pepper, and half the parmesan.

4. Spread potatoes on one half of the baking sheet and arrange chicken on the other half in a single layer.

5. Roast for 35–40 minutes until chicken is golden and cooked through and potatoes are crispy and tender.

6. Sprinkle remaining Parmesan and chopped parsley over the hot potatoes. Serve warm.

Notes

Use Yukon gold or red potatoes for best texture.

Adjust Cajun spice to your heat preference.

Don’t overcrowd the pan to ensure crisp roasting.
