Ingredients

4 Russet potatoes

2 tablespoons olive oil

1 teaspoon kosher salt

1/4 teaspoon black pepper (optional)

Instructions

1. Preheat oven to 425°F (220°C) and scrub the potatoes clean.

2. Dry potatoes and prick them several times with a fork.

3. Rub each potato with olive oil and sprinkle with kosher salt and optional black pepper.

4. Place directly on the oven rack or a baking sheet and bake for 45–60 minutes.

5. Potatoes are done when easily pierced with a fork and skin is crisp.

6. Let rest for 5 minutes before slicing open and serving.

Notes

Use Russet potatoes for fluffiest texture.

Avoid microwaving leftovers if you want to preserve the crispy skin.

Add toppings like sour cream, cheese, or chili for a hearty meal.
