Ingredients
2 cups all purpose flour
1 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 large eggs
1 tablespoon orange zest
1/2 cup fresh orange juice
1/2 cup vegetable oil
1/2 cup milk
1 teaspoon vanilla extract
1 1/2 cups fresh or dried cranberries
Instructions
1. Preheat oven to 350°F and grease or line a loaf pan with parchment paper.
2. In a bowl whisk together flour, baking powder, and salt.
3. In another bowl whisk eggs, sugar, orange zest, orange juice, oil, milk, and vanilla until smooth.
4. Gradually fold dry ingredients into wet ingredients just until combined.
5. Gently fold in cranberries without overmixing.
6. Pour batter into prepared loaf pan and smooth the top.
7. Bake for 50 to 60 minutes until a toothpick inserted in the center comes out clean.
8. Cool in pan for 10 minutes then transfer to a rack to cool completely before slicing.
Notes
Do not overmix the batter or the bread may become dense instead of tender.
If using dried cranberries soak them in warm orange juice for 10 minutes for better texture.
Tent loosely with foil if the top browns too quickly during baking.
