Description

This One-Pot Creamy Cajun Chicken Linguine with Garlic Mozzarella Sauce is a bold, cheesy, and spicy Southern-Italian fusion dinner that comes together in one pot. Perfect for weeknights, it features tender chicken, Cajun seasoning, garlic, mozzarella, and linguine cooked in a creamy sauce. Easy, comforting, and rich with flavor, it’s a must-try one-pot pasta recipe.

Ingredients

8 oz linguine

2 chicken breasts

1 tbsp Cajun seasoning

1 tbsp olive oil

3 garlic cloves, minced

1 cup heavy cream

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 cups chicken broth

2 tbsp butter

Salt and pepper to taste

1 tbsp chopped fresh parsley

Instructions

1. Season chicken breasts with Cajun seasoning, salt, and pepper.

2. In a large pot, heat olive oil over medium-high heat. Sear chicken until golden and cooked through. Remove and slice.

3. Reduce heat, add butter to the pot, and stir in minced garlic. Cook until fragrant.

4. Pour in chicken broth and heavy cream. Bring to a simmer.

5. Add uncooked linguine, ensuring it’s submerged.

6. Cover and simmer for 12 minutes, stirring occasionally until pasta is al dente.

7. Stir in mozzarella and Parmesan until melted.

8. Return sliced chicken to the pot and toss to coat in sauce.

9. Adjust seasoning and garnish with fresh parsley before serving.

Notes

Always use freshly grated cheese for better melting and texture.

Don’t overcook the pasta—al dente is perfect to absorb the sauce.

Add a splash of broth or cream when reheating to bring back the creaminess.
