Ingredients
1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
8 ounces mushrooms, sliced
3 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
8 ounces egg noodles
3/4 cup sour cream
Salt and pepper to taste
Instructions
1. In a large skillet or Dutch oven over medium heat, brown the ground beef until fully cooked. Drain excess fat if needed.
2. Add chopped onion and cook until translucent. Stir in minced garlic and cook for 1 more minute.
3. Add sliced mushrooms and cook for 5 to 7 minutes until they are golden and tender.
4. Pour in beef broth, Worcestershire sauce, and Dijon mustard. Stir and bring to a gentle boil.
5. Add egg noodles directly into the pot. Stir, then reduce heat to a simmer. Cover and cook for 8 minutes, stirring occasionally.
6. Remove from heat and stir in sour cream until the sauce is creamy and smooth.
7. Taste and adjust seasoning with salt and pepper. Serve hot.
Notes
This dish can be customized with spinach or kale for added greens.
To lighten the recipe, substitute Greek yogurt for sour cream.
Leftovers can be reheated with a splash of broth to keep the sauce creamy.
