Ingredients
1 lb chicken breast
2 tbsp Cajun seasoning
2 tbsp olive oil
3 cloves garlic
1 red bell pepper
1 yellow bell pepper
2 cups chicken broth
1 cup heavy cream
1 cup Parmesan cheese
2 tbsp honey
8 oz pasta
Salt and pepper to taste
Instructions
1. Generously coat chicken breast pieces with Cajun seasoning. In a large skillet over medium-high heat, add olive oil and sear chicken until browned and cooked through. Remove and set aside.
2. In the same pan, add garlic and bell peppers. Sauté until peppers are tender and garlic is fragrant.
3. Pour in chicken broth, scraping the bottom of the pan. Add heavy cream, Parmesan, and honey. Simmer until slightly thickened.
4. Add uncooked pasta and stir well to coat. Cover and cook until pasta is tender and sauce is mostly absorbed.
5. Return chicken to the skillet and toss everything together. Adjust seasoning with salt and pepper. Serve hot with extra Parmesan if desired.
