This one pan creamy spinach mushroom orzo with chicken is the perfect comfort dinner. Juicy chicken breast, tender orzo, earthy mushrooms, and spinach come together in a creamy garlic parmesan sauce. A quick, hearty, and flavorful one-skillet chicken dinner recipe for any night of the week.
Ingredients
1 tablespoon olive oil
2 tablespoons butter
2 chicken breasts
1 cup orzo pasta
1 ½ cups sliced mushrooms
3 cloves garlic, minced
2 cups chicken broth
1 cup heavy cream
3 cups fresh spinach
½ cup grated parmesan cheese
Salt to taste
Black pepper to taste
Instructions
1. Season chicken breasts with salt and pepper. In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat. Sear chicken on both sides until golden and cooked through. Remove and set aside.
2. In the same skillet, add remaining butter. Sauté mushrooms until browned. Stir in minced garlic and cook for another minute.
3. Add orzo and toast lightly for 2 minutes. Pour in chicken broth and bring to a simmer. Cook uncovered, stirring occasionally, until most liquid is absorbed (about 8–10 minutes).
4. Reduce heat to low. Add heavy cream and stir in fresh spinach until wilted. Simmer until sauce thickens slightly.
5. Slice cooked chicken and return it to the skillet. Sprinkle with parmesan cheese and stir until melted and combined. Serve warm.
Notes
Use chicken thighs if preferred — they add extra juiciness.
Add more broth or cream when reheating leftovers to loosen up the sauce.
Don’t skip toasting the orzo — it deepens flavor and prevents mushiness.
