Ingredients
1 pound cheese ravioli
6 slices bacon, chopped
1 cup heavy cream
1 cup parmesan cheese, grated
1 egg yolk
2 cloves garlic, minced
1 teaspoon black pepper, freshly ground
2 tablespoons parsley, chopped
Instructions
1. Boil the ravioli according to package instructions in salted water. Drain and set aside.
2. In a large skillet, cook chopped bacon over medium heat until crispy. Remove and drain on paper towels, leaving 1 tablespoon bacon fat in the pan.
3. Add minced garlic to the skillet and cook for 30 seconds until fragrant. Pour in the heavy cream and simmer for 2–3 minutes.
4. Stir in parmesan cheese. Quickly whisk in the egg yolk to avoid scrambling, letting the sauce thicken into a creamy consistency.
5. Add cooked ravioli to the skillet and toss gently to coat in the sauce. Add bacon back in and stir in black pepper. Heat through.
6. Serve hot, topped with chopped parsley and extra parmesan if desired.
