Description

This creamy Olive Garden Chicken Gnocchi Soup is a cozy one-pot dinner packed with tender chicken, pillowy gnocchi, spinach, and a rich, savory broth. It’s the perfect homemade comfort food inspired by the classic restaurant favorite. Great for meal prep, cold days, and easy weeknight dinners.


Ingredients

2 tablespoons butter

1 tablespoon olive oil

1 cup chopped celery

1 cup chopped carrots

1 small yellow onion, diced

3 garlic cloves, minced

1/4 cup all-purpose flour

4 cups chicken broth

2 cups cooked chicken, shredded

1 pound potato gnocchi

2 cups half and half

1 1/2 cups fresh spinach

Salt and pepper to taste


Instructions

1. In a large pot, heat butter and olive oil over medium heat. Add celery, carrots, and onion. Cook until softened, about 4-5 minutes.

2. Stir in the garlic and cook for 30 seconds until fragrant.

3. Sprinkle the flour over the veggies and stir to coat. Cook for 1 minute to remove raw flour taste.

4. Slowly whisk in the chicken broth and bring to a simmer.

5. Add shredded chicken and gnocchi. Simmer until gnocchi float to the top and are tender, about 5 minutes.

6. Lower the heat and stir in the half and half. Do not boil.

7. Add salt and pepper to taste.

8. Stir in the spinach and cook until wilted. Serve hot.

Notes

Use rotisserie chicken to save time.

If soup thickens too much when reheating, add a splash of broth.

For extra richness, replace half and half with heavy cream.
